Spaghetti Squash Frittata


Made this beautiful creation last night for dinner! Now usually when i try out new recipes its all made on trial and error. Sometimes they are fantastic and other times they are pinterest disasters! This however, Turned out AMAZING.

Ingredients
spaghetti squash
5 eggs
red and orange peppers
tomates
Mrs. dash seasoning
Coconut oil

Directions
Cut squash in half and scoop out the seeds. Place in a bowl of water and put in the microwave for 6 mins on high. Place a pan on the stove and heat up on medium heat with a tbs of coconut oil. Cut up veggies and crack eggs and mix together with a splash almond milk. Scoop out the spaghetti squash and place in the, patting it down to create the "Crust" effect. Season with Mrs. Dash. Pour egg and veggie mixture over the top and season again, Then place a lid on and turn the heat up just past medium. It will be finished when you can cut into pie pieces and scoop out without it falling apart. Approximately 15 mins

Top with cheese if you would like!
